Trying to get back on track.

Holy mackerel.. It's been too long. Honestly I got really lazy. Yup, this is all on me, I can't even think of an excuse why I'm not blogging anymore. Sorry about that, typical me floating around doing nothing. Thinking of ideas to start out a project and dropping it at the very last minute. Typical Karla.. anyhoo..


Ok guys, so I just graduated and it felt like seriously one of the best times of my life. Done with culinary school and done with internship. Yay! Now off to try new things, gain new experiences, meet new people, taste new food and start discovering myself! That is why I have applied for an internship in Ohio in America! It will be in a hotel in the city and I am just really excited about it. I am not sure if you guys already know, but I am from the Philippines. The country with 7,107 islands just underneath Taiwan and above Indonesia. I will be leaving within this month hopefully, and start a new chapter in my life. I will have the internship for about a year and this is the first time that I will be going in a different country ALONE. Yikes! To cut things short I will seriously try to write more.. I will try to get back on track and I will share more memories, shit i really love? And recipes!!  Recipes that have been tried and tested and definitely have been approved by me. Trust me I'm a culinary graduate ;) hahaha! See you soon! x Karla

I've been busy.

OK so i can't remember the last time wrote something in here. I've been very busy in school. Been cooking a lot, been studying a lot and I've been meeting a lot of people for the past few months. Everything seems to be going too fast.

Can you believe it's almost Christmas?! I have also been planning for the gifts that i will be giving away this year. Cookies? Cake? Cupcake? Candy? Well cakepops caught my attention and so far i have 1/3 of the things i need. YAY!

So what are cakepops? Well they are crushed cake binded with frosting and rounded up into balls. They can come from different types of flavors and colors. People can get really creative with it and some can just be simple with it. The Possibilities are endless. But for me I will be making a Christmas themed cakepop! They will probably look something like these.

Momma's Day

The only day where the mother's card section is crowded with dads, sons, daughters, boyfriends and friends. Well the sweet tooth i am,  i made my mom a Carrot Cupcake with Lemon frosting topped with candied carrot. Yum! The cupcake and frosting was the easy part the hard part was the candied carrot. I thought of making an easy fondant carrot topper for the cupcakes but i was a little coward and settled for the candied carrot but it didn't turn out great.

This is where i got the recipe: Candied Carrot Curls its a really good recipe, i swear. the problem was me. hahaha! i think i left it too long inside the oven but it's a really good idea. i also got the recipe from the same site and it was a hit. i adore Cupcake Project they have tons of recipes to choose from and the picture are cute and nice.
 
So if you still don't have a gift for your mom this can be a great belated treat for her! It sure was for my mom. Love you MOM!

turning korean, i think i'm turning korean. i really think so.

Recently, my mom got really hooked up with Korean Dramas. i have to admit, they're addicting. I especially like the romcom ones. So, she then thought of asking me if i would ever so kindly make the Korean Bibimbap for her and i did! For dinner.

What is a Bibimbap? Bibimbap literally means "Mixed Rice" Bibim = mix and Bap = rice. This is an everyday meal for Koreans and is already recognized around the world. I also learned (from doing a little research) that this is good for those who are in a hurry. You can put whatever you want in it. You can use your leftovers for this one too! I used chicken breast instead of beef to cut a little bit of calories but you can't still beat the good old beef.

Gochujang! or Red Pepper Paste! or in French Pate de piment rouge! This is very essential in Korean cuisine. Almost all of their dishes contain this magical paste! I just love it. This is readily available in the oriental section of your grocieries or simply go to a scpecialty shop. You can never get that red color on your Bibimbap without this baby but be careful, it might be a little too hot for some.

Now now now, you might ask: "How do i make this delicious bibimbap? where karla? where?!" Well... here is a really nice recipe for you! I changed some of the ingredients when i made some at home but this one is great too! Nice Bibimbap Recipe. tada!

In my Bibimbap i used chicken instead of beef and i added cabbage, canceled out on the zucchini and cucumber. And! forgot to put some spinach. So mine consists of the following: carrots, crispy seaweed, cabbage, beansprouts and chicken. Super minimal ingredients which are super available but still as good as the real one.
 
Next time when you're feeling hungry and want something different defenitely give this one a try. You won't regret it. Trust me.. No really, trust me. (Even my baby brother, who doesn't like hot food, loved it!)

Dad! It's today! Yes! Today you get older, but we still love you.

Huzzah! My Dad's birthday is today and i did end up making the Chocolate cake for him. I guess it was little bit rough to look at but it turned out great! One thing i would change though was the butter cream frosting in the middle it was a little bit heavy. Oh well, i will be using whipped cream next time. The Ganache was wonderful!!! It was shiny, thick and delicious.

The baking part was easy, the real challenge was the ganache and frosting but i gotta say it was really fun. I couldn't resist making a little taste test of the batter before baking it. A yummy batter is a yummy cake! Yum!

 
Everybody got a slice of the cake but of course dad got the biggest one. I can't believe that my first home-made cake was a success. This will be a good start for many more birthday cakes that i'm going to make. I should load my cake recipes and start baking!!



And that is my Chocolate cake covered with Chocolate Ganache sprinkled with Marshmallows.
My longest name so far. Anyway, i was thinking of making puffpastry from scratch next time. I've already done it but i want to perfect it so i'm going to do it again! Maybe..

off the subject

I'm really hooked up with the series New Girl lately. I swear, it's really awesome. It's funny at the same time you get butterflies in your stomach when you see the characters Jess Day (Zooey Deschanel) and Nick Miller (Jake Johnson) together and actually showing their feelings to each other.
And.. did i mention that Jake Johnson is a total eye-candy. hahaha! yah.. i have a thing for funny and immature guys. yes, that is bad.

Daddy's Birthday!

My dad's birthday is on the 24th and i am still thinking about if i should bake him a:

1) Carrot Cake
2) Red Velvet Cake
3) Chocolate Cake

Well he's a little bit of a traditionalist so i think i should bake him the Chocolate one but i really want to try out this Carrot Cake recipe that i found. I still have time to think.
 
As of now i already bought (well, i asked my sister to buy it for me) a cake tin. I was a little disappointed that it wasn't the one where you can remove the sides.. and the color was a bit off. Nonetheless i was very thankful that she bought it for me. I can't wait to try it out! I will surely need to brush it with butter and line it with parchment paper because i have this strong feeling that my cake will stick.

And! i bought new cupcake liners. They were fab! They were pink and i just love them. I always feel excited and pumped up when i buy or receive new cooking/baking items. It's such a rush! (weird) Hahaha! I know how teenagers are supposed to get excited when they get new make up or clothes or phones, but it really is different for me (well the phone might tickle me a little) i get excited when my mom and i go to the farmer's market. Also when i see new ingredients for me to use.

 
I would also like to have my own vegetable patch but i'm not really good with plants. There was this one time when my mom bought potted herbs for me. It was great for a couple of weeks but after i left for college i wasn't able to water it and eventually it died.. sad.
